Since we don't have proper kitchen ventilation, cast-iron searing isn't an option. So I've been using a torch to sear my sous vide steaks. Tried the "flash-fry to sear" method post sous vide last night, and the family agrees this is the superior method. Quite tasty. We like it mostly medium, so I go for 129 degrees in the bath, remove and dry, and then pop in the deep fryer for a few seconds. Gives us a perfect doneness.
