whole roasting chicken
preheat oven to 450. to ensure chicken is at room temperature, let it sit out of the fridge for at least 45 minutes. remove any giblets in the cavity and save them for stock. rinse chicken then thoroughly dry with paper towels. salt and pepper liberally on the inside and outside of chicken. tuck wings under and tie legs with kitchen twine. roast for 50 minutes to an hour. chicken is done when it reaches 165 degrees. let it rest for 10 minutes and carve.
