Why didn't anyone ever tell me that arugula can be sautéed like greens? I'VE WASTED YEARS NOT EATING IT THAT WAY. Bleak years spent eating dull, lifeless spinach and bitter, fibrous chard instead of glorious, peppery arugula!
(I don't regret the kale, though. I love kale -- and loved it long before it was popular, and will still love it when it's reduced to the ignominy of settling for a cameo in a Lifetime movie instead of top billing on a big budget feature film.)
