In the last 15 years, I've tried approximately 80 different varieties. Didn't know there were that many brands of chips? Well, potato chips are still made and marketed regionally by innumerable mom n' pop outfits, and get to convenience & grocery store shelves via mid-sized distributors, potentially making for a bold and spicy new adventure at every roadtrip gas station.
The vast majority I try are disappointing, too timid in spicy flavor, or lacking in chippy substance. The favorites, however, are Tim's, hailing from PNW and available at grocery's right here in LA. They're wickedly spicy with balanced pepper flavor and a hearty crunch. Louisiana's Zapp's --which started this whole odyssey-- comes in a close second, lacking only the kettle-cooked texture.
