15 Minute Falafel:
Take a tin of chick peas, empty into a cullender, wash and place into a bowl.
Chop a small onion and one clove of garlic very finely and add to the chick peas.
Add plenty of salt, pepper, chilli, ground coriander, cumin.
Add breadcrumbs to bind the mixture and use your hands to mash the mixture in the bowl until it is thoroughly mixed and will hold together, but not so finely mashed that it looses all texture. If its a little dry just add a teaspoon of water.
Roll into a cylinder 5-6cm in diameter and cut with a wet knife into disks of about 1cm depth.
Fry the falafel in a couple of mm of good, neutral tasting, oil, turning every minute or so until crisp on the top and bottom.
Serve with yoghurt and a little chopped mint to salad and unleavened bread or instead of hamburger.
