In a sudden Vegan moment I decided to make some cream substitute using oatmeal.
Pinch of salt
3 tablespoons peanut oil
Put the oatmeal in a pan, cover with some of the water, bring to the boil stirring constantly and continue to add the water forming a thin gruel. After cooking for 5 mins start to as the oil and salt again stirring constantly. After everything is added use a purée attachment to make the consistency as creamy as possible. Then strain through a cloth into a container and refrigerate.
You can use this as a cream substitute whilst cooking.
