And now for a very easy Spelt bread recipe:
250g wholemeal Spelt flour
250g white Spelt flour
30g Rolled Oats
flat teaspoon salt
coriander and nutmeg to taste
500ml lukewarm water
a cube of fresh yeast
2 Tablespoons of white wine vinegar
1 Tablespoon of oil
Coat your bread tin with a little oil and scatter a few oats in the tin. Place all the solid ingredients into a bowl. Place all the liguid ingredients into a measuring jug and stir until the yeast is dissolved. Pour the liquids into the bowl with the solids and mix thoroughly.
The resulting dough is very sloppy and sticky - don't worry this is normal.
Put the dough straight into the bread tin - no proving required!
Sprinkle a few oats over the top.
Put the bread tin into the oven for about an hour at 180′C.
The result is lovely nutty Spelt bread. Omnomnom
