As I'm absolutely awful at keeping veg around, and actually using it when it's fresh I decided to experiment with some dehydration of carrots, celery and green pepper. Seems to be going well. I'm always amazed and pleased at the lack of space things occupy when all the water is removed. Crazy, eh? Six bags of carrots to a quart jar.
Anyhow, I didn't dehydrate onions because I can't seem to keep them on hand once they've been dried and ground. :) They go into EVERYTHING.
The idea, I guess is that I'll use the carrots and celery, add them into a heated fat and create a mirepoix. Not sure if it'll work well, or fall on it's face. Time will tell.
I'm also really interested in the idea of reconstitution of these dry components with different liquids than one would normally think of. I could use kefir to rehydrate mushrooms, or maybe kombucha to reconstitute veg.
