I've tried a lot of different absinthes and I'm always hungry (thirsty?) to try new ones. There are currently only four brands that I always like to have on hand: La Clandestine, St George, Vieux Carré, and Abyss. I realize that the bottle is improperly labeled "liqueur" (absinthe is a spirit) and I can't find anything that indicates that Abyss is a liqueur. Even their website indicates that absinthe is a NON-SUGARED substance. But I digress.
My first sip of Abyss was a real eye-opener. I don't mean this in a good way. When my husband called me via FaceTime and asked me how the new brand was, I told him "it's absolutely VILE. Holy shit, how the fuck did this win an award at a spirits competition?" When he asked what it tastes like, my reply was "liquify a couple pounds of grapefruit pith, then soak it in alcohol. Then make it even more bitter."
He suggested that perhaps I should just count my losses and pour it out. I said, "I can't. I'm on my second glass. I'm nearly gagging on every sip, but I can't stop drinking it."
You know what? Eventually I not only acquired a taste for the stuff, but it has become my go-to brand when I am in a defiant mood, when I feel like the weight of the world is on my shoulders, when I am faced with a whole bunch of impossibilities - I have a glass of this stuff and suddenly I feel like my challenges are smaller, my stamina is greater, and suddenly I find myself with metaphorical blue tights and cape, ready to take life by the balls.
And, believe it or not, I've come to really enjoy the flavor as well.
