We're staying in Denver for a month and got here a couple of days ago. We were greeted with snowfall and 0 degree weather. It's snowing again in Denver today but we're staying tropicool inside with some homemade plantain chips to take us back to Costa Rica. They're so delicious and easy to make. Just 2 plantains, sliced and peeled, tossed in 2 tbsp coconut oil, and sprinkled with sea salt. Bake at 350 for 25-30 minutes. Dip them in some guac, ceviche or crush them just like this.
